    at this junction , I prefer WESSB's method of fat cap down because it makes the meat moist from the bottom up. as a matter of fact , wessb makes me moist , i mean , moist , oh excuse me ... I meant to say I like Wessb moist , ohhhh crap , I meant to say... consult an old timer like wessb to get the real recipe.
