Memorial Day Brisket

Started with a 15.6 lb, untrimmed, USDA Choice brisket. Trimmed 6" from the leanest section of the point (for a future braise) and cooked for 13.5 hours at 240 dome in my XL.

Wrapped for one hour prior to serving. Moist and tender.

While I continue the brisket project, this is the best yet.
