8.5 lb pork shoulder just went on the BGE----grate temp holding pretty firm at 225 deg.

First overnight cook :)

    Good luck, I'm sure it will be great. Just make sure the temp is steady and you will be good ;)

    Congrats on the cook. I did two picnics last night for a BBQ that we ate little while ago. Everyone thought I was a hero for the taste and moistness of the pork. Made a Eastern Carolina sauce and that was a huge hit. I love my LBGE! :P :woohoo: :ohmy:

    EW called for a 200º dome temp and it would be in your best cooking interest to ignore that and stick with 250º dome. Everything else is right on the money.

    Good luck and wait for it . . . wait . . . the plateau will come along and scare you a bit somewhere around 170º or so and will hang there for as much as a couple of hours. Just let it alone the Egg will do its job.
