Mother's Day Scallops

So the recent Birmingham tornado rocked my local seafood place, but I wanted to do some scallops for the wife on Mother's Day, since they are her favorite. Had to settle for some much smaller than I would have preferred. But they were surprisingly good. Down and dirty: EVOO, Tsunami Spin, grilled at 375 for 4 minutes per side, then drizzled with melted butter. Feta green beans, loaded smashed taters and a biscuit later, and it was a complete dinner. The wife approved. Most likely because of the bottle of Smoking Loon merlot that I threw in on the side. But as long as mama's happy...
