3 slabs of Ribs

We are eating at 5:00pm. When is the best time to put 3 slabs of Spare Ribs on? I figure I would start the EGG now, a little after 11am PST.

After last weeks experiment, I don't want to overcook the ribs.

    What temp will you be using to cook? I put my St Louis SRs on at 1:00 to cook for 5 hours at 275 deg.
