Got my Easter Turkey brined and ready. My first Egg Turkey - any suggestions out there?

    Easy (or none) on the smoking wood chips and if you use any, use a fruitwood. Turkey can take on too much smoke and actually taste nasty in my opinion. I cook mine at 375 dome temp, indirect and it takes around 2 hours for a smaller bird (12 lb). Turkeys cook fast in the egg since it cooks like a convection oven. Make sure your thigh temps get to 180 even if it causes your breast to go over the 160 internal temp. I now seperate the breasts and thighs/legs and pull each portion off when it hits the target temps.
