Spatchcock Chicken Salad

This is a follow-up on the spatchcock chicken cook from last night.

I started by chopping red, yellow, and green peppers along with a sweet onion, celery, granny smith apples and then added some golden raisins.

I added just a little of the smoked chicken breast (it was a 7.8 pound bird)!

I mixed that up with mayo and added the same rub I used on the chicken to give it more of that flavor profile. YUM!

Susan bought some sunflowers and made a Sunflower cake for dessert.
