Just saw a segment of a Mario Batali show where he was restaurant hopping in San Francisco. At one place, they prepared baked rigatoni with roasted eggplant and tomato. It looked sooooo good - better than this pic I found with the recipe at cooking channel. Anyway, looks like it's easily done on the egg so I thought I'd share.

    It looked so good on tv, I was trying desperately to remember what they put in it. then, i found it online so I thought I'd share. lotsa steps so it might be a pita, but i want to try it.

    might even post pics. :) or the link again. :laugh: :laugh:
