Rib Question

About to put two racks of spares on the large BGE. I've read both bone up and bone down. Which is the way to go? I'm guessing bone down towards the fire. Using plate setter.

    bk,[p]bone down is how i've done them when i don't use the rib rack.[p]Scott

    bk,[p]I have a temperature hot spot toward the rear, so I allign a leg of the plate setter about where the hinge is to diffuse some of that heat. I lay ribs front to back with the meaty ends toward the rear, starting bone down but I flip & mop a couple of times. (I mostly use a vertical rack or roll them & tie 'em off).[p]~thirdeye~
