Little unusual - a dish my MIL used to make or pretty close to it.

"Eggs in Purgatory" or "Eggs poached in Tomato Sauce"

Sauteed a bunch of tomatoes, onions, garlic and then added some new potatoes. Adjusted thickness with V8 juice and tomato sauce.

It was mightyfine - the rice came out like
Spanish rice. Next time will leave out the potatoes and drop the egg in earlier.
