Fire roasted salsa

Put some tomatoes, garlic, onion. and chilis on direct at 400. Turned them frequently getting a blackened skin on everything.

Pulled each piece off as they were done, the onion taking the longest, about 30 minutes. Let them cool for about 30 minutes then removed any loose skins.

Put the tomatoes, half the onion, half the garlic, one jalapeno, and two serranos into the food processor with the juice of a lime, some cilantro, some salt, and a little cumin. Gave it a couple quick pulses. Fried up some corn tortillas and had a tasty snack. -RP

Any certain type/brand tortilla? What kinda oil or does it make a difference? I wanna try em. :)

Any corn tortilla works, sometimes I'll mix white corn ones with yellow corn ones. Fry them at 350 for a few minutes until the bubbles slow down and salt them as soon as they come out. I use popcorn salt because it is very fine. -RP

Excellent job! Why does fire roasting make salsa so much better? Who cares, it does!!!!

I make a salsa verde this way too, it makes the tomatillos taste so great.

Boy does that look like some good stuff Randy. Thanks for sharing and showing that we can all give that a go. ;)

I'm sure it carried a nice bit of smokey flavor into it and I can't recall having anything like that in the past. Can't wait to try it.
  • It looks great, Randy. Super nice snack.

Thanks for posting this Randy. Had a roommate years ago that used to roast the tomatoes and make his own picante and salsa. Got an award for his picante at the Terlingua chili cookoff. I wasn't really into cooking back then, so I didn't pay attention to how he made it but I have never forgotten how good it was! I am going to give this a try!

YUM! Looks wonderful, that is my favorite kind of salsa. Also love to a similar one with tomatillos.
