Does anyone have an good recipe for Pheasant on the egg? I am looking for how to smoke some pheasant?

    hammer , This is the second pheasant post today so I will chime in. Brine the birds with an assertive brine such as the one I am suggesting in the link below. Before cooking, wrap the birds in bacon tied on well. Cook indirect, like you'd cook a turkey. You'll need to baste with cranberry or raspberry chipotle something to make it perfect. Or maple syrup - grade B if you can find it easily. JCA
