need beef short rib suggestions

I scored some top quality beef short ribs from my farmer -- free range, grass fed, no antibiotics, yadda yadda yadda.

Anyway, I've never prepared these before and I'd love to see some recipes and hear other's stories. He sells a lot of these to a local restaurant (whose chef beat Jose Garcias on Iron Chef America) and says this guy cooks them slowly overnight in their own fat "confit").
