OT Balsamic pickled onions

I was at a Kroger store yesterday that has a great Mediteranian bar that included balsamic pickled onions. From what I could find from a Google search, they are apparently made with a small, flat Italian onion. They are FANTASTIC! Has anyone had any luck making something similar?

BTW, they had $4.99 whole boneless ribeyes!

    They are called cipollini onions and I get them from a mediterrean deli also. The un-marinated I find at a local fresh veggie stand. They are very tastful marinated or sauted to go with a steak.

    Chiopinni? Probably have to grow my own around here. I have a hard time finding shallots!
  • I think Richard meant cipollini - if you have a Whole Foods around you, they should have them there. I roasted them with balsamic vinegar before and thought they were quite good. Pickling them in the balsamic sounds like an awesome idea. Will definitely do that at some point!

  • that got me thinking( scary eh?.).... has anyone made balsamic pickled eggs?... or does anyone here have a favorite recipe for pickled eggs in general.... red or white.... i like either.... i have not made them in decades!.....( yikes! i 'm turning into a geezer!) thanks! ranger ray
