    Going good so far. I worked the polar bear plunge yesterday so I am a little worn out. Today is some R&R time with some Guinness!

    Have you checked the internal temp and checked for tenderness with a fork? 7 hours seems awfully long for a 4 pound flat.

    175 degrees when I checked right before the picture, it's only 8 degrees outside so I attribute the length of time to that.

    What type of thermometer are you using to check the internal temp? Is it calibrated? I've never had a Brisket take more than 1.5 hours per pound. Have you checked for tenderness with a fork?

    I have had some that take over 2hrs per pound. Briskets have a mind of their own.
