Ok, this Texan has been smoking tritips for 20 years. This is 1st tritip on BGE using Morro Bay Rich's recipe that looks so fantastic.
Seared for 3 min per side, rested and back on egg at 350. Thermapen after 35 minutes showed 150+ range.. was hoping to pull at about 130.. blew me away that these cooked so fast.
I'm used to low and slow, six hours for tritip brisket (3 smoked and 3 in foil).
Cutting into them in about 30 minutes... hope they are ok.. no backup plan.
Will do a postmortem :blink:
