I have some 8oz blocks of different cheeses and plan on smoking them this afternoon.
Need some feedback please on how long they need to smoke with apples chips???

I did a batch of 8 oz. blocks Friday.I went 1.5 hours.I do 16 oz.blocks 2 hours or more.

I always go with 1/2 pounders, even if I cut them.
I go real simple with the "bean can & soldering iron" smoke generator.
I have gotten to the point of going two hours (my family, friends and people that I sell to all like a stronger flavor), with Apple-wood.
Cherry is nice too!! -

We just did it for the first time with the can/soldering iron (caveman) method; we used apple chips and smoked for 1.5 hours. It is cooling outside - per all the advice, I am not putting it into my fridge for a while ! Hoping for good results..

I really don't think it is a problem in the fridge. once it is bagged.
I wrap in a plastic wrap and then into a freezer Zip-Lock and have not had any smokey smells.
