<p />Starting with the notion that any and all porportions are subject to modification....[p]8oz cream cheese....softened
2-3 slices Sreano Ham or Prosciutto.... diced
1 large Shallot..... diced
1-2 flat leaf parsley...chopped
1 1/2 lbs Crimini or large Button mushrooms
2 tblsps salted butter[p]
Mix the top 4 ingredients. Invert the caps and spoon the mixture into the Mushrooms.
Dip the stuffed caps thouroughly into the melted butter
Smoke 6-8 minutes over med heat using your favorite smoking wood.[p]*..I also have used pancetta ( instead of the Serano Ham)...diced and saute'd with garlic, till crispy.[p]** Using a fine Microplane...shave a good,aged Aisago or Parmigiano Regiano over the caps while still hot!![p]Enjoy!!
