no pics yet, but this place has turned into a veritable deli.

so far i've sliced and vac-bagged pancetta, loin bacon, and sweet maple bacon. i have some savory bacon on deck, and three duck prosciutto breasts after that.

giving the stuff as christmas gifts. nothing says "merry christmas" like searing abdominal cramps and nausea.

this was what it looked like a few weeks ago (November 18th) in the fridge

    yeah. sounded good on paper!

    i still need to slice half the sweet and savory. maybe monday. i am supposed to be getting the slicer for christmas, so i had to clean it and put it away before the kids get home from school. :laugh:

    ran out of foodsaver bags too.

    i cooked the trimmings (from squaring up the ends) the other day to top some soup. wife is making clam chowder now with some trimmings from today.

    the stuff is great. been eating it raw. the much drier end cuts are my favorite frankly. almost like prosciutto.

    how do you sear those? TRex? Or do you hot tub them?

    That's the trooth, believe it or not.
    Been eating the ends and trimmings all day. My carotid artery is jammed with lard. Things are starting to get blurry
