Another Take on AZRP's Chili Relleno Casserole

Today I did a freezer dive and came up with some stuff for a little bit different version of AZRP's casserole.

I started with some frozen hashbrowns in the bottom

topped that with half my Mexican cheese mix

Then a layer of poblano peppers that I roasted last summer and stored in a food saver bag and followed that with some shredded, grilled chicken (also from a food saver bag).

Finally another layer of cheese. I made the mixture of milk, eggs, flour, and S&P and poured over the top. I baked it for about 45 minutes, until the cheese was starting to brown. Pretty darn good for leftovers!

It was good and I think the leftovers are going to be better!
