Chile Relleno casserole revisited

A week ago I was playing around with this casserole and thought I would see if I could kick it up. They were roasting chilies at the farmer's market and I got some poblanos and anaheims. I diced up a half cup of each.
Next I whisked up 2 eggs, 6 oz evaporated milk, 1 Tbs of flour, and a tsp of salt.
I folded that mixture into 16 oz of colby and jack cheese, the chilies, and about a cup of pulled pork.
Then I spread the mixture out in a greased 11 X 7 baking dish.
Then baked in a 375 degree Egg for about 40 minutes until the top browned.
This was really good, I preferred it to the last one I made. It didn't have as much green chile flavor, but it had a fair amount of heat. The cheese picks up a nice amount of smoky flavor from the lump. -RP

I cooked the old recipe last night. I did put some corn tortillas on the bottom of the casserole dish.
I am not sure if there was a correction but when I began putting some of the cheese on 2lb's seemed too much. I ended up putting on a mix of about 2 to 3 cups.
That was really good. I would think the roasted chili's would be a nice 'tweak'.

Question Randy. Why evap milk vs reg? Seems to me that the evap is adding a sweetness. Wondering.

I thought the same thing when my sister gave me the original recipe and questioned her about it. She swore that 2 lbs was correct. I always make a recipe exactly as it is given to me the first time, then I tweak. -RP

When you ate it with the 2 lb's did it seem like too much cheese? I will try it with all the cheese on the next go around. I really enjoyed the cook.

I thought it was good. I was thinking instead of two cans I'd do 3 or go crazy with 4 cans of chiles. I served it with guacamole, salsa, tomatoes, and chips. Basically turned it into a sorta solid cheese dip.

I think you might be thinking of condensed milk (very sweet) instead of evaporated milk. -

I like this one even better than the first one, Randy...looks awesome! I know the original recipe was 2 lbs of cheese...just to clarify for this version, is it 1 lb of each that you used or a combined 1 lb ?
