Anyone ever make jerky using deer backstrap? It would be some prime jerky.

I wouldn't want to use the backstrap for that. The steaks are too good. Might even have a mealy texture since the grain of the meat is pretty fine.
Shoulders and hams are better for jerky. -
 LAWDAMERCEY!!!! PLEASE don't waste a backstrap on jerky!

My son wants to do this with the straps from his deer :( :(

grampaw always sed, "lots of folks think that if sumthin is good, it must make everything better".
if he likes beer, then tell him to add a can to his next batch of mac n cheese (what did he just say? :ermm: )ed egli avea del cul fatto trombetta -Dante -

Don't ruin that backstrap! :( Jerky is intended for those cuts of meat that aren't prime, like a backstrap of venison. :cheer:

Ok Ok yall have convinced me not to use Backstrap for jerky Thanks for all the comments. I usually marinate it in whole milk with chopped rosemary, garlic and peppercorn then wrap it in applewood bacon and cook on the egg till medium rare :cheer:

another way you can cook it up is to cut them in to bite size pieces, dip in milk or egg, then into flour or crushed saltine crackers, and fry in a little bacon grease!!! either way you decide you will love it!
