wood chips

I cannot seem to find Pecan wood chips anywhere, is there an acceptable subsitiution? Apple, Cherry? I've been told never Hickory in the Egg.


  • Any fruitwood is mild but a turkey can be oversmoked making it nasty in my opinion. If you use chips...go light with them dispersed throughout the lump. The lump alone will impart a mild smoky taste.
