I cooked a Mad Max turkey and gravy last thanksgiving for in-laws house and it was a huge hit. I think I must have threatened their turkey superiority. I was told they would do the turkey this year. They did offer for me to smoke a turkey breast only. I am looking for a way to knock their socks off. They have asked for a true smoked flavor and dark skin. Does anyone have any tips on brining or anything else that would give great flavor. I am not worried about gravy or anything. I am up for anything brining, injecting etc.....

I'm doing a longtime favorite turkey breast from Old Dave's site. They are injected and marinated. These come out really good and he has complete instructions.
I injected mine last night and will be cooking it later this afternoon.
