I wish I could be making turkey for Thanksgiving but going to Brother-in-Law's, at 12pm (too damn early for me.
I will do a turkey eventually. What is the difference is the way the turkey cooks as well as the taste ?

Gary I always spatchcock. 400 direct, high in the dome and use a coffee rub. It just works for me, so easy...Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers.

I don't think the flavor is all that different, but the spatchcock cooks faster and more evenly.
Go for it.
