More Pizza - Thanks icemncmth!

I was going through my recipes and realize I owe my success with pizza to icemncmth. When I wanted to make pizzas, I found his posts and followed them as closely as I could. I keep on experimenting but am not sure the pies are any better than those first ones, but it is fun!!!
Tonight I made a couple of pies and they really turned out good. The first one is a little unusual and I took extra pictures.
I started by rubbing a mixture of EVOO, garlic, fresh rosemary, and salt on the crust.
Then I hit it with a layer of fig jam and Gorgonzola cheese.
Finally I topped it with prosciutto.
Here it is, ready to pull.
The second pie was a regular ol' pepperoni with a three cheese mix (sharp white cheddar, aged provolone, and mozzarella).

Great looking pizza. I'm hope to try cooking some in a few days. Anything you could share would be greatly appreciated. Do you make your own crust? Is that parchment paper under the pizza? How does that work?

I make my own dough and if you send me an E-mail, I will send a copy of my recipe. It is basic - 60% hydration - dough, but I have a table of ingredients and it is too hard to put in the recipe section.
I use parchment. It is easy and the round pieces of parchment give me a target to press out the dough. -
