Potato roasting fat

Roasting up some potatoes for dinner tonight. I usually just use olive oil, but I've got some rendered bacon grease, and rendered beef fat in the fridge.

Cast your vote: which would you use?

    Depends on how much fat and how many potatoes. Mixed fats should be ok if you need all of it.

    Bacon Grease.

    olive oil. no contest.

    I hate it when I go to the kitchen for food and all I find are ingredients!

    I would use the bacon fat, most likely. Tallow is a stronger, and sometimes off-putting flavor. If the potatoes are to accompany a beef dish, I might try the tallow, but for any other protein, I'd go with the bacon fat.

    Olive oil for healthy, bacon grease for flavour, depends on your priorities!!!

    if none, then olive oil or bacon grease.

  • If you ever get a hold of it, duck fat, by far, creates the tastiest roasted potatoes.

  • Thanks for the input and advice, everyone. I had completely forgotten that brussels sprouts were also on the menu. Since bacon and brussels sprouts go so well together, I used the bacon grease with the sprouts. With the input I got about beef tallow sometimes tasting a little off, I decided to go with the old standby olive oil on the taters. Thanks for that, jeffinsgf.
