Smoked cheese question

I tried the caveman technique yesterday with some blocks of cheddar, jack, pepper jack, and mozzarella. I sampled some at 90 minutes then let it go another 30 minutes. Sometime during the process, I bumped the drop cord that was powering my 35 watt soldering iron. This apparently caused the can to shift and I ended up with a little melted plastic on the upper handle.
I used pecan and Jack Daniel's barrel chips in the can. The cheese has a faint bitter flavor. I can taste the smoke just fine, but my concern is the melted plastic.
Is that a health concern? Should I toss the cheese and start over?
I'd like to hear people's opinions on this, I was planning on serving the cheeses as appetizers for the upcoming Thanksgiving gathering. What do you think? Is the cheese safe to eat? Thanks!

I think you'll be fine. In my experience the cheese is a little bitter at first. I usually let the cheese age wrapped and sealed for a couple of weeks after smoking. The flavor seems to sink in as well as mellow.

Tim,
What Ken said. Follow through this link to my lessons learned about plastic handle. Next time, I'll use a 'vertical' can.

Many thanks for the replies. I'll let the cheese mellow in the fridge and see what it does. The caveman technique is really easy and I will do it many times I am sure.Watkinsville, Ga XL, Medium

If it's still too smokey/bitter next weekend, don't give up, give 'em more time to mellow and serve them at Christmas!canuckland
